Chipotle is rolling out a new sauce option, Red Chimichurri, to customers across the U.S. and Canada starting today. The bright and tangy condiment will only be available for a limited time.
The new sauce, made fresh daily in stores, features ingredients like roasted garlic, chili peppers, fresh cilantro, and citrus juice. It’s being introduced alongside the return of Chipotle’s popular Carne Asada and is meant to pair well with any entrée.
Chipotle Rewards members who signed up by Monday, September 29, can try Red Chimichurri for free today with the purchase of a regular menu item.
While the sauce is new to the chain’s offerings, chimichurri itself is a traditional condiment known for its bold, herbal flavors. Chipotle’s version follows the release of Adobo Ranch, the company’s first new dip in five years, which was credited with driving guest engagement.
According to the company, younger diners are especially drawn to sauces — a 2024 study cited in the release found that 92% of Gen Z consumers would visit a restaurant specifically for a sauce.

- Chicken Bowl with chili-corn salsa and Red Chimichurri
- Sofritas Bowl with fajita veggies and Red Chimichurri
Red Chimichurri contains no artificial ingredients and is served on the side. It is available in-store and via the Chipotle app or website, while supplies last.
